Cold
Peanut (or Sesame) Noodles
1/4 cup
peanut butter or toasted sesame paste (or 1/8 cup of each)
1 Tbs. soy sauce
1 Tbs. lemon juice
1 small garlic clove, minced
1/4 tsp. dried hot pepper
1/4 tsp. sugar
6 oz. spaghetti (cooked)
1 cucumber, peeled, seeded & cut diagonally into 1/8 inch slices
1/3 cup thinly sliced scallions
Blend peanut butter (or
sesame paste), soy sauce, lemon juice, garlic, pepper flakes, sugar
and 1/4 cup hot water until smooth. Toss with spaghetti and cucumbers
and top with scallions.
