Seaweed Salad With Ginger Dressing

  • 1 palm-full dried wakame
  • 1/8 cup bonita flakes (optional, available at Asian Markets)
  • Big bowl of mesclun or lettuce

Ginger Salad Dressing:

  • 2 Tbs. ginger
  • 1/4 cup mirin
  • 1 cup oil (veg or canola)
  • 1/4 cup rice vinegar (seasoned)
  • 2 Tbs. mustard
  • 1 - 2 Tbs. soy sauce
  • 1/8 - 1/4 cup lemon juice

Rehydrate wakame in cool water for 10 minutes. Toss with greens, bonita flakes and dressing.
